Cuppies are my invention of pie turned into cupcake. I bake a simple white cake that tastes almost like a sugar cookie in cupcake form, hallow out the middle of the cupcake, add graham cracker crumble and pie filling to the middle and then ice the Cuppie with a whipped cream icing topped with graham cracker crumble and an ingredient that goes with the type of pie in the middle. I have made several Cuppie flavors including coconut cream, key lime, pecan, pumpkin and cherry cheesecake. I am hoping to sell Cuppies $3 each or two for $5 at the Farmer's Market, but right now I am accepting orders preferably by the dozen of any pie flavor you would want.
